Apple Brown Betty

Serves 6

Prep time 10 min. Bake time 1 hour

• 1 1/2 lbs. (4-5 large) Braeburn or Rome Beauty Apples
• 5 slices hearty white bread, crusts removed, cut into 1 inch chunks
• 1/2 cup apricot jam or preserves
• 8 Tbl. (1 stick) unsalted butter
• 1/2 cup raisins
• 1 1/2 tsp. cinnamon
• 1/2 tsp. nutmeg

Preheat oven to 375 degrees F. Wash, core and cut the apples into 1 inch pieces. In a large mixing bowl, combine all ingredients. Mix well and plare in a 9 inch by 13 inch baking dish. Cover with foil and bake for 30 minutes on a cookie sheet.* Remove foil and bake an additional 30 minutes or until apples are soft and deep golden brown. Serve hot.

*Chef's Note: This dessert goes well served with vanilla ice cream

*The brown betty may bubble over a bit during baking. The cookie sheet will catch any drips and keep your oven clean.
