Key Lime Pie With Coconut

Toasted coconut adds a nice twist to this classic recipe. Another bonus is that it is ultra easy to make.

Serves 2

Crust
3/4 cup crushed graham crackers
3/4 cup sweetened coconut
1/2 cup melted butter

Filling
4 egg yolks
1 cup lime juice
1 14 oz. can sweetened condensed milk

Topping
1/2 pint cream, whipped
1/3 cup toasted coconut

Preheat oven to 350° F.

Mix crushed graham crackers and coconut together. Add melted butter and mix until well blended. Using fingers, press crust mixture into bottom and up the sides of a 9 inch pie pan. Bake crust for about 6 minutes until set.

Beat eggs yolks until foamy. Add lime juice and condensed milk and beat until well mixed. Pour mixture into crust and bake for twenty minutes. Cool completely. Top with whipped cream and sprinkle with toasted coconut.


Zanzibar found this "recipe for Key Lime Pie With Coconut, as featured in Fabulous Foods online cooking magazine." He might've done soemthing wrong, but it really failed to congeal in the oven very much. It was still very yummy though. Later, we discovered that the key lime pie from Trader Joe's (local pseudo organic/bulk food store) tastes exactly the same, comes frozen, and is really good frozen.
