Polenta Bake (vegetarian)

For an 8x8 baking pan (double for a full size 9x14 lasagna pan)

  1 large tomato
  1/2 red or green pepper
  1/2 bunch of fresh spinach
  1/2 onion
  1 c polenta
  3 1/4 c water
  1 t salt
  1/4 cup olive oil
  1/2 c grated parmesian

  350 oven.  Cut all vegetables, wash and chop spinach.
  Put the polenta, water, salt and oil in the baking dish.  Add all the vegetables
  Bake for 45 mins, sprinkle with cheese, let stand and solidify for 5 minutes. devour.

  Great as a leftover.
