Sweet Potato Pie

(one nine-inch pie)

1 Pastry Crust for 9-inch pie (book tells how to make, but we buy at store)
1 1/2 cups canned sweet potatoes, mashed
2/3 cup granulated sugar
2 tablespoons butter, melted
1/2 teaspoon nutmeg
1/2 teaspoon mace
1/2 teaspoon vanilla
1/2 teaspoon salt
2 tablespoons lemon juice
3 eggs, beaten
1 cup light cream

Preheat oven to 450 degrees F, pie crust into pan, prick shell on bottom and sides with a fork. Bake 10 min, remove from oven and turn heat down to 375 degrees F.

Mix sweet potatoes and sugar

Add butter, nutmeg, mace, vanilla salt and lemon juice. Mix well. Gradually add eggs and cream, mix untill smooth.

Pour mixture into partially baked pie shell.

Bake pie at 375 degrees F for 35 - 40 min or until knife inserted in center comes out clean.
